This recipe uses a combination of fresh mushrooms and dried ones, including fresh chanterelles and dried porcinis. These mushrooms can run a bit on the pricey side so you can use button mushrooms in lieu of either one. It’s the perfect easy, comfort soup.

This recipe is more than enough for two people. Unless you’re both crazy hungry, plan on having a little bit leftover. If you’d like to add meat to this dish, substitute about 3 to 4 ounces of meat for the black beans. Ground beef, ground turkey, or shredded chicken make good substitutions.

This Homemade Taco Seasoning is an excellent spice blend to add to your spice cabinet. I made this blend with the Southwestern Quinoa Stuffed Peppers in mind. What is great about the blend is you can add it to so many different dishes to liven them up because of its sweet yet smoky flavor profile. I personally love it on freshly popped popcorn, grilled veggies, and of course, these quinoa stuffed peppers.

This recipe was inspired by Green Foods for Men by Michael De Medeiros and Jenny Westerkamp RD. In this book, they talk about how there seems to be a universal male aversion to green foods and how eating green foods became unmanly at some point in time.

In grammar school, my mom would pack me a granola bar that was so dry I’d nearly break my teeth. Perhaps I made the Chewy Carrot Cake Granola Bars extra chewy with those jaw-breakers in mind. If you don’t want them as chewy, you can add a little less maple syrup and coconut and bake for several minutes more.

Dark chocolate clusters are what I make when I’m looking for a sweet treat but something that’s not too naughty. They are delicious and so easy to make using simple ingredients.

With these little clusters of bliss, you really only need two ingredients – nuts and chocolate. Whatever nuts you have on hand will do fine, although some work better than others. I use mainly walnuts with almonds and then top the dark chocolate with pumpkin seeds. One variation is to add dried cherries. Mmm.
