Fennel & Pear Smoothie Bowl

Smoothie bowls are great because they allow me to blend as I normally do with smoothies, but then I’m able to top the smoothie with fixings like organic coconut shreds, chopped up fresh fruit, and chia or flax seeds.

This recipe was inspired by Green Foods for Men by Michael De Medeiros and Jenny Westerkamp RD. In this book, they talk about how there seems to be a universal male aversion to green foods and how eating green foods became unmanly at some point in time.

They also talk about why green foods work (improving circulation, restocking magnesium, reducing toxins, etc) and when and how to enjoy greens. It’s a great reminder to make sure our brothers, husbands, fathers and sons are taking good care of their health and eating their greens.

One recipe that caught my eye was the Fennel, Pear, and Ginger Juice. I absolutely adore fennel and jump at the opportunity to make something with fennel. Because the recipe calls for a juicer and I don’t have one, I used the ingredients as a jumping off point to create my own smoothie bowl recipe using some of the same ingredients, namely fennel and pear.

Ingredients
  • 2 cups water
  • ½-inch fresh ginger slice
  • ½ fennel bulb
  • 2 medium pears, cored
  • 2 lemon wedges, squeezed
  • 3 mint leaves
  • ½ teaspoon chia seeds
  • Dash of shredded coconut (optional)
Instructions
  1. Place all ingredients except chia seeds and coconut into a blender and puree until smooth.
  2. Place into two bowls. Top each with chia seeds, other cut-up fresh fruit on hand, and shredded coconut. Enjoy! Makes 2 smoothie bowls.
