Green Bubble Tea

Green bubble tea first caught my eye at a small cafe in Hoboken, New Jersey about five years ago. I loved not only the way it tasted but the way it looked. The beautiful pale green color paired with luscious round tapioca balls. After a friend inspired me to make my own green bubble tea, I decided to experiment. I’ve spent the last several days getting to know tapioca pearls and I’m revisiting my love for bubble tea.

In case you’re not that familiar with bubble tea, it’s a tea beverage that originated in Taiwan in the 1980s. Most bubble teas contain a tea mixed with fruit and/or milk and often tapioca pearls. The type of tea used varies as well as the ingredients added. I opted for a green bubble tea with black tapioca pearls. I visited a local Asian supermarket and stocked up on black tapioca pearls, matcha (see notes section below), green tea, and thick straws.

What I love about green bubble tea is that it contains healthy green tea, it’s naturally colorful (no dyes used), it’s a sweet and delicious treat, and it makes a fun drink for kids because they’ll love the color and texture of the chewy pearls.

A few notes:

  • I recommend large black tapioca pearls. At first, I purchased large white tapioca pearls and I ran into problem after problem. They broke apart. They clumped up into a huge mass. They were mushy on the outside but starchy on the inside. If you know a secret about cooking these pearls, please let me know.
  • Thick straws are a must with these large pearls. The pearls will get lodged in standard straws. I was able to get them at the Asian supermarket with the other ingredients.
  • Matcha can also be purchased at an Asian supermarket in the tea section. This is a key ingredient to the green bubble tea. It’s basically finely milled Japanese green tea. It creates a powder and sugar is added to it. It naturally provides a beautiful green color and great flavor.

Serves: 2 people
  • For Tapioca Pearls:
  • 3 cups water
  • ¼ cup brown sugar
  • ½ cup raw tapioca pearls
  • For Bubble Tea:
  • 8 to 10 ice cubes
  • 1 cup green tea brewed
  • 1 cup milk of your choice
  • 2 tablespoons matcha
  • ½ cup cooked tapioca pearls
  1. To cook tapioca pearls: In a medium saucepan, boil 6 cups of water. Once water reaches a boil, add brown sugar and mix well. Add tapioca pearls and cook for 10 minutes on medium heat, stirring occasionally. Set aside.
  2. In a cocktail shaker, add ingredients except tapioca pearls. Shake well. Add tea mixture to 2 nice glasses. Add ¼ cup of cooked tapioca pearls and a thick straw per glass. Enjoy! Makes 2 bubble teas.

  1. Wow it looks absolutely yummy! It’s tougher to make green milk tea than regular milk tea because of the need to balance the inherited bitterness of jap match/green tea. Amazing job to the tea selection tip!!! Can’t wait to try~ 😉

  5. I have loved bubble tea ever since I discovered it in Los Angeles. And I, too, have had problems cooking the tapioca pearls. Now, it is easier to buy a tall cup of melon bubble tea when I am north of the border, rather than fight the sticky pearls. Litchi bubble tea is out of this world!

  7. Hello Trish,
    Cook your pearls for the recommended time, mine were 2-3 minutes. Wait till they float to the top of the pot. Then take them out and put them in cold water till chilled. This worked for me, let me know if this worked for you. Thanks for the awesome recipe.
